Flan Cake

1/2 cup milk
2 tablespoon butter
2 each eggs
1 cup sugar
1/2 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt

In sauce pan scald milk, add butter. Beat eggs thoroughly. Add sugar and vanilla, beating until light and fluffy. Fold in dry ingredients alternately with milk. Pour batter into greased and floured flan pan. Bake at 350 degrees, 25 minutes, or until cake tests done. Cool 5 minutes before removing from pan. Fill with fruit, pudding or ice cream.

Yield: 10 servings
