Freezer Bread Dough

breads

6 1/4 cup all purpose white flour
2 pkg active dry yeast
2 cup milk
6 tablespoon butter
1/3 cup sugar
2 teaspoon salt
2 each eggs

In large mixing bowl, combine 2 1/2 cups flour, and yeast. In saucepan heat together milk, butter, sugar, and salt, just till warm, (115-120 degrees, on cooking thermometer), stirring constantly till butter melts. Add liquid to dry ingredients in mixing bowl, along with eggs. Beat for 30 seconds, scraping sides of bowl constantly. Beat 3 additional minutes. Stir as much remaining flour into dough as can be mixed in with a spoon. Turn out onto a lightly floured pastry board. Knead in enough of the remaining flour to make a stiff dough that is smooth and elastic, 6-8 minutes. Divide dough into thirds. Shape half of dough portions into 2 loaves. Divide remaining dough into 16 portions. Shape each into a smooth ball. Arrange balls 1 inch apart in flat baking pan. Freeze dough balls and loaves. Transfer balls to a plastic bag in freezer when frozen. Makes 2 loaves, and 16 balls. From 1 recipe, you can make 2 loaves of Busyday White Bread, 1 pan of Honey Walnut Pull-a-parts, and 8 Shortcut Clover Leaf Rolls.
