Fried Green Tomatoes

6 each green tomatoes
1 each egg, beaten
1 cup cracker crumbs
2 tablespoon melted butter
1/2 teaspoon salt
1/8 teaspoon black pepper

Wash and slice tomatoes, and set aside. Combine butter, salt, and pepper. Brush butter mixture over the tomatoes. Dip tomato slices individually in cracker crumbs, then in egg, and once again in cracker crumbs. Fry in buttered skillet for 7-8 minutes. Turn often.

Yield: 6 servings
