Ground Meat Mix

3 each eggs
2 cup soft bread crumbs
1 cup celery, chopped
1 cup onion, chopped
1 cup carrot, chopped
3 lb ground beef
In large mixing bowl beat eggs, slightly. Stir in bread crumbs, celery, onion, carrot, and 1 teaspoon salt. Add meat, and mix well. Cook half meat mixture at a time till meat is lightly browned. Drain off fat, and cool. Measure meat in 2 cup portions, into freezer containers. Label with contents, amount, and date. Freeze.
Yield: 60 servings
