Harvest Pumpkin Cookies

1 1/2 cup brown sugar
1/2 cup butter
1 teaspoon vanilla
1 teaspoon lemon extract
2 each eggs
1 1/2 cup pumpkin
1/2 teaspoon salt
1/4 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
2 1/2 cup flour
4 teaspoon baking powder
1 cup nuts, chopped

Cream brown sugar and butter. Add spices, beaten egg, lemon extract, vanilla and pumpkin. Mix well. Add dry ingredients and nuts. mix thoroughly. Drop by teaspoons full on to lightly greased cookie sheet. Bake at 350 degrees, 15-20 minutes.

Yield: 48 servings
