Hash Brown Potatoes

1/4 cup bacon grease
1 each onion, chopped
4 cup potatoes, sliced
1 teaspoon salt
1/4 teaspoon pepper

Heat bacon grease in large heavy skillet. Add sliced potatoes and onion. Sprinkle with salt and pepper. Cook covered, over low heat for 15-20 minutes. Remove cover and turn heat to medium. Cook 10 minutes longer or until potatoes are thoroughly browned.

Yield: 8 servings
