Hauntingly Delicious Toasted Pumpkin Seeds

1 cup pumpkin seeds
5 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon cayeen pepper
1 1/2 teaspoon cooking oil

Preheat oven to 250 degrees. In medium bowl, combine 3 tablespoons sugar, and spices. Set aside. Remove seeds from pumpkin, and place in colander. Rinse seeds thoroughly, and remove all membranes. Spread on baking sheet which has been sprayed with cooking spray. Bake for 1 hour. Heat oil in a large skillet. Add toasted pumpkin seeds and 2 tablespoons sugar. Cook and stir over high heat until sugar melts and seeds begin to carmelize. Pour seeds in bowl with spices and toss to coat. Store in air tight container.

Yield: 12 servings
