HAWAIIAN MUFFINS: (Quick Bread Mix)

1 can crushed pineapple, 8 1/4oz
1 1/2 cup quick bread mix
3 tablespoon sugar
1 each egg, beaten
1 tablespoon sugar
1 tablespoon grated orange peel

Drain pineapple, reserving pineapple syrup. Pour syrup into 3/4 cup measure. Add enough water to fill measuring cup with liquid. In medium mixing bowl, combine quick bread mix, and 3 tablespoons sugar. Combine beaten egg, pineapple syrup mixture, and 1/4 cup crushed pineapple. Add all at once to dry ingredients, stirring just till moistened. Fill greased or paper bake-cup lined muffin tin cups 2/3 full. Stir together remaining crushed pineapple, 1 tablespoon sugar, and grated orange peel. Spoon 1 tablespoon pineapple mixture atop batter in each muffin cup. Bake at 400 degrees, 20-25 minutes, or till golden. Serve warm.
