HOT DOG QUICHE: (Easy Egg Pastry Crusts)

1/4 cup onion, chopped
1 tablespoon butter
6 each hot dogs, sliced thin
1 cup american cheese, grated
3 each eggs, beaten
1 1/2 cup milk
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/8 teaspoon pepper
1 each pie crust, 9 inch

Roll pastry into a 12 inch circle. Place in 9 inch pie plate, and flute edges. Line pastry with foil. Fill with dry beans. Bake at 450 degrees, for 7 minutes, to prevent pastry from puffing up. Remove pastry shell from oven, and reduce temperature to 325 degrees. Remove foil and beans from pie plate and discard. In small skillet, cook onion in butter, till tender but not brown. Place thinly sliced hot dogs, cheese, and cooked onion, in baked pastry shell. In small mixing bowl, combine eggs, milk, dry mustard, salt, nutmeg, and pepper. Pour mixture into pie shell. Bake quiche, at 325 degrees, 35-40 minutes, or till knife inserted near center comes out clean. Let stand 10 minutes before serving. Cut into wedges.
