HOT MEXICAN BEEF BAKE: (Ground Meat Mix)

1 can crushed tomatoes, 16oz
1 can enchilada sauce, 10oz
1/4 teaspoon salt
2 cup ground meat mix
6 oz american cheese, 6 slices
1 cup creamy cottage cheese
1 each egg, beaten
1 pkg tortilla chips, 8oz, crushed

In medium saucepan, combine tomatoes, enchilada sauce, and salt. Add ground meat mix, and simmer, covered, 20 minutes, stirring occasionally. Shredd cheese, and set aside half of cheese for topping. Stir cottage cheese, and egg into remaining shredded cheese. Spread half meat mixture in 12-7 inch baking dish. Top with half cheese mixture, and of crushed tortilla chips. Repeat layers, ending with tortilla chips. Bake at 350 degrees, 25 minutes. Sprinkle reserved 1/2 cup cheese over top and return to oven 5 minutes, till cheese melts. Let stand 5 minutes before serving.

Yield: 6 servings
