JELLO: MELON BUBBLES

1 pkg any kind gelatin, small
3/4 cup boiling water
1/2 cup cold water
1 single ice cubes
1 cup melon balls

Dissolve gelatin in boiling water. Combine cold water and enough ice cubes to make 1 1/4 cups. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Measure 1 1/3 cups gelatin into a small bowl. Add melon balls. Pour into individual serving glasses or serving bowl. Whip remaining gelatin at high speed of electric mixer until fluffy, thick, and about doubled in volume. Spoon over gelatin in glasses or serving bowl. Chill until set, about 2 hours. Garnish with additional melon balls if desired.

Yield: 8 servings
