JELLO: SPARKLING PUNCH BOWL

4 pkg any kind gelatin, large
8 cup boiling water
1 each leeter, gingerale
1 single ice cubes
5 cup cut up fruit
1 can pineapple chunks, drained

Dissolve gelatin in boiling water. Combine gingerale and ice cubes to make 8 cups. Add to gelatin, stirring until slightly thickened, remove any unmelted ice cubes. Measure 4 cups of gelatin, and set aside. Fold cut up fruit and pineapple chunks, into remaining gelatin. Suggested fruits are, bananas, halved grapes, and halved strawberries. Pour into large punch bowl, chill until set, but not firm. Whip reserved gelatin at high speed of electric mixer until fluffy, thick, and doubled in volume. Spoon over gelatin in punch bowl. Chil until firm, about 2 hours. Garnish with additional fruit, and mint leaves if desired.
