JELLO: STRAWBERRY LIME PIE

2/3 cup boiling water
1 pkg lime gelatin, small
1/4 teaspoon grated lime peel
2 tablespoon lime juice
1/2 cup cold water
1 single ice cubes
1 each tub coolwhip, 8oz
1 cup sliced strawberries
1 each graham crust, 6oz

Stir boiling water into gelatin in large bowl, until dissolved. Stir in lime peel and juice. Mix cold water and ice, to make 1 cup. Add to gelatin, stirring until slightly thickened. Remove any remaining ice. Stir in 2 1/2 cups coolwhip using a wire whisk until smooth. Gently stir in sliced strawberries. Refrigerate 30 minutes, or until mixture is very thick, and will mound. Spoon gelatin mixture into crust. Refrigerate 4 hours, or until firm. Top with remaining coolwhip, and garnish as desired.

Yield: 8 servings
