JELLO: TROPICAL BREEZE

desserts

1 pkg any kind gelatin, small
1 1/2 cup boiling tropical blend juice
1 tablespoon grated citrus rind
1/2 cup cold water
1 single ice cubes
3/4 cup light corn syrup
2 each egg whites, slightly beaten

Dissolve gelatin in boiling juice. Stir in rind. Combine cold water and enough ice cubes to make 1 cup. Add to gelatin, stirring until ice is melted. Stir in corn syrup and slightly beaten egg whites. Place bowl in larger bowl of ice water. Let stand, stirring occasionally, until gelatin is slightly thickened, about 5 minutes. Beat gelatin mixture at high speed of electric mixer until thick and frothy. Pour into a 9-5 inch loaf pan. Freeze until firm, about 6 hours, or over night. Scoop frozen mixture into individual dessert glasses and serve immediately. Garnish with citrus curls if desired.
