JELLO: WALDORF SALAD

2 cup boiling water
1 pkg lemon gelatin, large
1 cup cold water
1 tablespoon lemon juice
1/2 cup mayonnaise
1 each red apple, diced
1 cup seedless grapes, halved
1/2 cup celery
1/4 cup chopped nuts
Stir boiling water into gelatin in a large bowl, until gelatin is completely dissolved. Stir in cold water and lemon juice. Refrigerate about 1 1/2 hours, or until thickened. Gradually stir in mayonnaise with a wire wisk. Stir in the apple, grapes, celery, and chopped nuts, and pour into a 5 cup mold. Refrigerate for 4 hours, or until firm. Unmold, and serve on salad greens if desired.
Yield: 10 servings
