Lemon Pepper Sandwich Loaf

1 lb loaf white bread
1 each stick butter, softened
1 tablespoon chives
1/2 teaspoon grated lemon peel
1 1/2 teaspoon lemon juice
1/4 teaspoon pepper
1 tablespoon prepared mustard
2 teaspoon poppy seeds
8 each slices swiss cheese
8 each slices bacon crumbled
Cut bread into nine slices, cutting to, but not through, bottom crust. In small mixing bowl, cream butter until light and fluffy. Add chives, lemon peel, lemon juice, mustard, and poppy seeds. Set aside 3 tablespoons of lemon butter mixture. Spread remaining lemon butter mixture, on all cut surfaces of loaf. Place 1 slice cheese in each cut. Sprinkle bacon over cheese. Spread the reserved lemon butter mixture on top and sides of loaf. Bake on ungreased baking sheet, at 350 degrees, 15-20 minutes.
Yield: 9 servings
