Lime Chicken

1/2 cup salad oil
1/2 cup lime juice
2 tablespoon chives
1/2 teaspoon grated lime peel
1/2 teaspoon salt
1 each chicken, cut up

To prepare marinade, in small bowl, thoroughly combine oil, lime juice, chives, grated lime peel, salt, and 2 drops hot pepper sauce if desired. Place chicken in flat dish. Pour marinade over chicken. Marinate in refrigerator, 8-24 hours, turning occasionally. Place chicken in broiler pan. Broil, 5-7 inches from heat, till lightly browned, about 20 minutes. Brush chicken occasionally with marinade. Turn, and broil 15-20 minutes longer, or till done, basting occasionally with marinade.

Yield: 6 servings
