Magic Crust Coconut Custard Pie

2 cup milk
4 each eggs
1/2 cup sugar
1/2 cup flour
1/4 cup butter, 1 half stick
1 teaspoon vanilla
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 cup flake coconut
In blender or food processor, combine milk, eggs, sugar, flour, butter cut into pieces, vanilla, nutmeg, and salt. Cover, blend about 10 seconds or till well mixed. Do not over blend. Stir in coconut. Pour coconut egg mixture into greased 9 inch pie plate. Bake at 350 degrees, 40 minutes, or until knife inserted in center comes out clean. As pie bakes, it magically forms its own soft crust. Cool before serving.
Yield: 8 servings
