MEAT BALLS IN CONFETTI RICE RING: (Freezer Meat Balls)

2 1/2 cup rice
5 cup water
1 pkg frozen vegetables, 10oz
1/4 teaspoon salt
1 cup creamy sauce mix
2 cup cold water
1/4 cup ketchup
1 each onion, chopped
1 teaspoon worcestershire sauce
1 cup american cheese, grated
24 each meat balls

For rice ring, place rice, 5 cups water, and mixed vegetables in saucepan. Cover, bring to a boil. Reduce heat to simmer, and cook 20 minutes. In large skillet, thoroughly combine creamy sauce mix, and 2 cups cold water. Stir in ketchup, onion, worcestershire sauce, and grated cheese. Cook and stir till thickened and bubbly and cheese has melted. Add meat balls, and heat through. Stir rice mixture, then press into ungreased ring mold. Unmold at once, on bed of cooked broccoli on hot serving platter. Fill center of ring with meat balls and some sauce. Pass remaining sauce to pour over meat balls and rice.

Yield: 6 servings
