MOCHA RAISIN BREAD: (Quick Bread Mix)

1 tablespoon instant coffee crystals
1/2 cup milk
1 cup quick bread mix
3/4 cup packed brown sugar
1/4 cup flour
1 each egg, beaten
1 cup mashed bananas
1 cup raisins
1/2 cup nuts, chopped

Dissolve coffee crystals in milk, set aside. In large mixing bowl, stir together Quick Bread Mix, brown sugar, and flour. In small mixing bowl, combine egg, mashed banana, and coffee mixture. Add to dry ingredients, stirring just till moistened. Fold in raisins and nuts. Grease 1 loaf pan. Pour batter into prepared pan. Bake at 350 degrees, 55-60 minutes. Cool in pan for 10 minutes. Remove from pan, cool thoroughly. Makes 1 large loaf.

Yield: 12 servings
