cakes, cheese/eggs

1 each graham cracker crumb crust:
1 1/4 cup graham cracker crumbs
4 tablespoon butter, melted
1 tablespoon sugar
1 each filling:
3 pkg cream cheese, softened
3/4 cup sugar
1 tablespoon flour
1 1/2 teaspoon vanilla
3 each eggs
1 each egg yolk
1/4 cup milk

Preheat oven to 375 degrees. Prepare graham cracker crumb crust in 9 inch spring form pan. With fork, mix crumbs using 11 rectangular graham crackers, melted butter, and sugar. Press mixture firmly onto bottom and up side of pan. Bake 10 minutes. Cool on wire rack. Reduce oven to 300 degrees. Prepare filling. In large bowl, with mixer at medium speed, beat cream cheese and sugar, until smooth and fluffy. Beat in flour and vanilla until combined. Reduce speed to low and beat in eggs and egg yolk, 1 at a time, beating after each addition. Beat in milk just until blended. Pour batter into pan. Bake 55-60 minutes, until cake is lightly golden, edges are set, and the area 3 inches from center is slightly wet. Cool completely on wire rack. Refrigerate over night before serving. To serve, remove side of pan. Place cake on plate, and garnish with fruit.
