BB: FAVORITE CREAMY SCALLOPED POTATOES

6 each large red potatoes
2 cup mock sour cream
2 cup nonfat cheddar cheese
1/4 cup diced onion
3 tablespoon skim milk
1/2 teaspoon light salt
1/4 teaspoon ground pepper
2 tablespoon liquid butter buds
1/3 cup crushed stuffing mix

Boil potatoes until tender. Drain, peel, and slice very thin. Set aside. Combine mock sour cream, cheese, onions, milk, salt, and pepper. Mix potatoes, with sauce mixture. Spoon potato mixture into a 9-13 glass baking dish, which has been sprayed with Pam. Combine 2 Tablespoons liquid butter buds, with 1/3 cup crushed Pepperage Farm seasoned cubed stuffing mix. Sprinkle crumbs over top. Bake at 300 degrees, for 30 minutes, or until hot and bubbly. Per serving: fat 0.2 G, cholesterol 0 MG, fiber 2 G, calories 149, 1 percent calories from fat, protein 7 G, carbohydrate 22 G, sodium 135 MG.
