Orange Ham Ring

3 each eggs, beaten
1/2 cup orange juice
1/2 cup saltine crackers crushed, 14
2 tablespoon prepared mustard
1 lb cooked ham, ground
1 lb ground pork
1/2 cup orange marmilade

In large mixing bowl, combine eggs, orange juice, cracker crumbs, and 1 tablespoon mustard. Add ground meats, and mix well. Spoon evenly into ring mold. Firmly pack meat mixture into mold. Invert immediately, into a shallow baking pan with sides. Remove mold. Bake at 350 degrees, 50 minutes, or till done. Spoon off fat. In saucepan, heat together orange marmilade, and remaining 1 tablespoon mustard. Brush loaf with half marmilade mixture. Bake 10 minutes longer. Arrange orange slices atop loaf. Brush with remaining marmilade mixture. Garnish with indive and spiced crab apples if desired.
