Oven Barbicued Pork Roast

1 1/2 lb boneless pork loin
2 each red delicious apples
1 cup fresh or frozen cranberries
1/4 cup barbicue sauce
2 tablespoon firmly packed brown sugar

Preheat oven to 325 degrees. Place pork on a rack in a shallow roasting pan. Roast until pork is browned, and center reaches 165 degrees on a meat thermometer, about 1 hour and 20 minutes. Meanwhile, in a medium sauce pan combine peeled, cored, and chopped apples, cranberries, barbicue sauce, brown sugar, and 1/4 cup water. Bring to a boil. Reduce the heat and simmer uncovered, stirring as needed, until cranberries pop and the sauce is slightly thickened, about 15 minutes. Place the pork on a serving platter and slice. Spoon sauce over pork slices. Per serving: 217 calories, total fat 7 G, saturated fat 2 G, cholesterol 67 MG, sodium 146 MG, carbohydrate 13 G, fiber 1 G, protein 25 G, calcium 29 MG, points 5.
