PARMESAN BEEF AND PASTA BAKE: (Ground Meat Mix)

6 oz elbow macaroni
1 each egg, beaten
1/3 cup parmesan cheese
1/4 cup milk
2 cup ground meat mix
1 can tomato sauce, 8oz
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
3 tablespoon butter
3 tablespoon flour
1 1/2 cup milk
1 each egg, beaten
1/4 cup parmesan cheese

Cook macaroni in boiling salted water, 10 minutes, or just till tender, then drain. Combine macaroni, beaten egg, 1/3 cup parmesan cheese, and 1/4 cup milk. Set aside. In skillet, cook, ground meat mix, and tomato sauce covered, over low heat, 15 minutes, breaking up meat with fork. Stir in cinnamon, nutmeg, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Set aside. To make sauce, in saucepan, melt butter. Stir in flour, and 1/4 t salt. Add 1 1/2 cups milk all at once. Cook and stir till thickened and bubbly. Cook and stir, 1-2 minutes longer. Remove from heat. Stir 1/2 of hot mixture into beaten egg. Return egg mixture, to remaining hot mixture in saucepan. Stir in 1/4 cup parmesan cheese. Place half macaroni mixture in 9 inch baking dish. Spoon meat mixture atop. Add remaining macaroni mixture. Spread sauce over top of casserole. Bake uncovered, at 350 degrees, 40-45 minutes. Let stand 10 minutes, before serving.
