Peanut Butter Chewy Chocolate Cookies

2 cup flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 each sticks butter, softened
2 cup sugar
2 each eggs
2 teaspoon vanilla
1 pkg peanut butter chips, (10oz)

Preheat oven to 350 degrees. Stir together flour, cocoa, baking soda, and salt. Set aside. Beat butter and sugar until fluffy. Beat in eggs and vanilla. Gradually add dry flour mixture, beating well. Stir in peanut butter chips. (Use 1 10oz package or 1 2/3 cups). Drop by rounded teaspoons onto lightly greased cookie sheet. Bake 8-9 minutes. Do not over bake. Cookies will be soft and will flatten while cooking. Cool slightly, remove to wire rack. Makes 4 1/2 dozen cookies.PAN RECIPE: Spread batter in jelly roll pan. Bake at 350 degrees, 20 minutes, or until set. Cool in pan on wire rack. Cut into 4 ounce bars.ICE CREAM SANDWICHES: Prepare cookies as directed. Cool. Press 1 scoop of vanilla ice cream between flat sides of cookies. Wrap individual sandwiches and freeze.
