BB: FAVORITE MANDRIAN ORANGE SWEET POTATO CASSEROLE

4 lb sweet potatoes
1 cup packed brown sugar, or:
1/2 cup brown sugar, plus:
2 teaspoon sweet and low brown
1 1/2 tablespoon corn starch
1/4 teaspoon light salt
1 1/2 teaspoon ground cinnamon
1 cup apricot nectar
2 teaspoon grated orange peel
2 tablespoon liquid butter buds
1/2 cup grape nut cereal
2 can mandrian oranges, 8oz each

Peel and boil potatoes and set aside. Combine sugar, corn starch, light salt, and cinnamon, in a sauce pan. Add apricot nectar, and orange peel. Bring to a boil, stirring constantly. Remove from heat, and stir in butter buds. Pour sauce over sliced sweet potatoes, and drained Mandrian oranges which have been placed in a 9-13 inch casserole dish sprayed with Pam. Sprinkle grape nut cereal on top. Bake at 350 degrees, 25 minutes. Per serving, all sugar: fat 2 G, cholesterol 0 MG, fiber 2 G, calories 161, 1 percent calories from fat, protein 2 G, carbohydrate 40 G, sodium 65 MG.
