Pineapple Upside Down Cake

6 tablespoon butter
1 cup brown sugar
1 can crushed pineapple, drained
1 can pineapple chunks, drained
1 each jar mariscino cherries,
1 pkg yellow cake mix

In medium sauce pan melt butter and brown sugar together. Pour into lightly greased 9-13 inch baking dish. Add thoroughly drained crushed and chunk pineapple. (Use large cans). Arrange mariscino cherries in bottom of dish. (Remove stems before adding cherries to pineapple mixture). In mixing bowl prepare yellow cake mix according to box directions. Pour over cherry pineapple mixture in baking dish. Bake, according to box directions, inserting a wooden pick in center of cake to test for doneness. When pick comes out clean, or when cake cracks in the center, it is done.

Yield: 16 servings
