BB: FAVORITE SPICY CHICKEN SALAD

12 oz cooked chicken white meat
4 each hard boiled egg whites
1/4 cup sweet pickle relish
1 tablespoon chopped onion
1/4 cup chopped celery
1 can water chestnuts, drained
1 tablespoon mustard
1/2 cup nonfat mircle whip
1 each bot thousand island dressing
1 teaspoon hickory salt seasoning

Sprinkle chicken with hickory seasoning, and bake 20-30 minutes, covered at 350 degrees. Cook eggs and chop whites, discar yolks. Chop water chestnuts. In a mediumsized bowl combine all ingredients accept chicken. Remove cooked chicken from oven and chop into cubes. Fold diced chicken into dressing mixture. Chill about 30 minutes. In preparing this recipe, use fat free Thousand Island dressing. Serve with nonfat salteen crackers or on a sandwich, or on a lettuce leaf with fresh fruit. Per serving: fat 2 G, cholesterol 36 MG, fiber 0 G, calories 158, 11 percent calories from fat, protein 16 G, carbohydrate 18 G, sodium 685 MG.
