PUFFY BEEF BEAN CASSEROLE: (Stew Meat Mix)

2 tablespoon butter
2 tablespoon flour
1 teaspoon prepared mustard
1/2 teaspoon salt
1 cup milk
1 cup american cheese grated, 4oz
1 1/2 cup stew meat mix
1 can green beans drained, 16oz
3 each egg whites
1/8 teaspoon salt
3 each egg yolks

In saucepan, melt butter. Blend in flour, mustard, and 1/2 teaspoon salt. Add milk all at once. Cover and stir till thickened and bubbly. Cook and stir 1-2 minutes longer. Stir in 1/2 cup cheese. Stir in stew meat mix and green beans. Heat till cheese is melted and meat cubes break apart. Turn into 1 1/2 quart casserole. In large mixing bowl, beat egg whites, and 1/8 teaspoon salt, till stiff peaks form. In small bowl, beat egg yolks till thick and lemon colored. Stir in remaining 1/2 cup cheese. Fold egg yolk mixture into beaten egg whites. Spread atop hot beef mixture. Bake at 375 degrees, 30-35 minutes, or till golden.
