Pumpkin Filled Oatmeal Cookies

1 1/2 each sticks butter
1/2 cup packed brown sugar
1 each egg
1/4 cup molasses
1 cup quick oatmeal
2 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup pumpkin
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg

In large mixing bowl, cream butter and brown sugar. Beat in egg and molasses. Place oatmeal in blender container, or food processor, cover. Blend till finely chopped. In small mixing bowl stir together, oatmeal, flour, salt, and baking soda. Stir into creamed mixture. Chill. Meanwhile, in small sauce pan, combine pumpkin, sugar, cinnamon, ginger, and nutmeg. Cook and stir till bubbly, cool. On floured pastry board, roll dough to 1/8 inch thickness. Cut into 36 3 inch circles. Place 1 teaspoon of pumpkin mixture atop 18 of the circles. Place on an ungreased cookie sheet. Cut decorative slits for Jack-o-lantern faces in remaining circles, if desired. Place remaining circles atop filling. Seal edges with fork. Bake at 375 degrees, 12 minutes.
