Quick Peanut Brittle

1 cup salted peanuts
1 teaspoon vanilla
1 teaspoon butter
1/2 cup white corn syrup
1 cup granulated sugar
1 teaspoon baking soda

Combine sugar and corn syrup in 3 quart microwave safe glass bowl. Cook on high, 4 minutes. Add peanuts and continue cooking 3-4 minutes. Add butter and vanilla and continue cooking 1 minute. Add soda and gently stir until mixture is light and foamy. Pour and spread quickly onto a baking sheet which has been covered with waxed paper or greased foil, For 30-40 minutes, or until firm. Break into small pieces to finish cooling. Store in air tight container.
