Quick Tapioca Pudding

3 tablespoon quick tapioca
1/3 cup sugar
1/8 teaspoon salt
1 each egg, beaten
2 3/4 cup milk
3/4 teaspoon vanilla

Combine tapioca, sugar, salt, egg and milk in sauce pan. Let stand 5 minutes, stirring constantly. Remove from heat and stir in vanilla. Let stand 20 minutes. Stir once at end of 20 minute period. Serve warm or chilled.

Yield: 6 servings
