Shaker Angel Food Cake

1 1/4 cup cake flour
1/2 cup sugar
12 each egg whites, 1 1/2 cups
1 1/4 teaspoon cream of tartar
1/4 teaspoon vanilla
1 1/3 cup sugar
1/4 teaspoon salt

Combine flour and 1/2 cup sugar, and mix thoroughly. Combine egg whites, cream of tartar, salt, and vanilla, in large bowl. For best results, have egg whites at room temperature. Beat at high speed, until soft peaks form. Add remaining sugar, beating until blended well. Add flour mixture. Fold in flour mixture gently, and thoroughly. Pour into ungreased 10 inch tube pan. Bake at 375 degrees, 35-40 minutes. Cool cake, upside down in pan on cake rack. Loosen cake from sides of pan and remove. Coffee Angel Food Cake, can be made by adding 3 tablespoons instant coffee to dry ingredients.
