Shaker Baked Zucchini And Tomatoes

2 each zucchini
2 each tomatoes
1 each onion
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoon butter
1 cup crushed ritz crackers

Wash zucchini, but do not peel unless skin is hard. Peel tomatoes and onion. Slice all vegetables into thin slices. In greased baking dish, make alternate layers of zucchini, tomatoes, and onion, sprinkling each layer with salt, pepper, and dotting with butter. Cover top of casserole with crushed cracker crumbs. Bake at 350 degrees, until vegetables are tender, about 30 minutes.
