Shaker Caramel Tarts

2 cup light brown sugar
4 each egg yolks
1/4 cup flour, plus
2 tablespoon flour
4 teaspoon butter
2 cup cold water
1 1/2 teaspoon vanilla

Beat egg yolks, slightly. Add brown sugar mixed with flour. Put in double boiler, and gradually stir in water. Cook until thick. Add butter and vanilla. Serve in tart shells topped with unsweetened whipped cream, sprinkled with brown sugar.

Yield: 12 servings
