Shaker Chicken Croquettes

4 cup cooked, diced, chicken
1 cup mushrooms
2 cup dry bread crumbs
1 1/2 cup chicken broth
1 teaspoon onion, chopped
1 each stick butter, melted
1/2 cup celery, chopped
1/2 teaspoon salt
1/4 teaspoon lemon juice
1/8 teaspoon red pepper
1 tablespoon parsley
1 teaspoon onion, chopped

Soak bread crumbs in broth. Grind chicken and mushrooms. Mix all ingredients together, and let cool. Shape cooled mixture into croquettes, about 2 ounces to each, and chill. When ready to use, dip each croquette into bread crumbs, then into beaten egg, mixed with 2 tablespoons milk, then dip into bread crumbs again. Fry in deep fat. Serve with mushroom cream sauce.

Yield: 8 servings
