Shaker Chicken Tarts

2 cup cooked chicken, diced
2 teaspoon salt
1/2 teaspoon pepper
1/3 cup flour
1/3 cup butter
1/3 cup cooking sherry
1 cup chicken broth
1 1/2 cup light cream
1/2 lb mushrooms
1 each pemento, chopped
1 each green pepper, chopped

Cook mushrooms, and green pepper until tender. Add pimento and set aside for later use. Melt butter in double boiler, and stir in flour. Gradually add chicken broth, and cream. Cook until thickened, stirring constantly. Add salt and pepper. Add diced chicken, mushrooms, pimento, green pepper, and sherry. Serve in tart shells, and sprinkle with paprika before serving.

Yield: 6 servings
