Shaker Chocolate Tarts

1/4 cup sugar
1/4 cup flour, plus
2 tablespoon flour
1/4 teaspoon salt
2 cup milk
2 each egg yolks
1/4 cup sugar
1 tablespoon butter
2 each squares, chocolate

In top of double boiler, mix sugar, flour, and salt. Place over heat, and gradually add milk and chopped chocolate squares. Cook, stirring occasionally, until thick. Cover, and cook 12 minutes longer, stirring occasionally. Pour a little of the hot chocolate mixture into egg yolks that have been beaten with 1/4 cup sugar. Combine egg mixture with chocolate mixture in double boiler. Cook 2 minutes longer, and remove from heat. Cool, and serve in baked tart shells, topped with unsweetened whipped cream.

Yield: 12 servings
